Any watch will be fine I guess, as long as its not gonna be a hassle to change/reset your time in flight. Like Maverick said, you're mostly gonna use it during navigation as a stopwatch. One of the captain's I know uses a usual swatch during flights, which according to him is all u need IN the cockpit. Of course, the more branded ones would be eye candy, but I don't think you'd wanna be meddling with them too much right?
I myself am happy with my Casio Edifice when flying, comfy and easy to use..haha ::D:

yeah...im using a rm300 watch for more thn 2 years now...
nvr encounter any problem so far...
dun need to be too worry bout that..
as long as ur watch can keep time...thn its ok..
so many other things u should worry 1st... :p

My brother uses http://www.casio.com/products/Watches/Databank/DBC30-1/ when he's flying, though he owns many fake high-end aviator watches haha(IWC,Breitling etc)..He said the watch is very practical for flying..
